Grandma’s Cheesecake

Ready in 1 ½ hours


Ingredients/Shopping List

Crust

  • 9 Graham Crackers

  • 5 Tablespoons Butter

  • ¼ cup Sugar

Filling

  • 3 packages of Cream Cheese - SOFTENED

  • 6 eggs

  • 1 cup sugar

  • 1 ½ teaspoons vanilla

Topping

  • 1 pint Sour Cream 

  • ½ cup sugar

  • 1 teaspoon vanilla

Preparation

Crust

  1. Preheat oven to 350°

  2. Finely crush graham crackers.   Melt butter.  In a small bowl mix graham cracker and sugar together,  then pour melted butter over and mix until it is the consistency of wet sand.

  3. Butter bottom of 9/13 pan and press mixture into the bottom

  4. Bake for 10 minutes then let cool for 10 minutes.  Cool oven to 300°

Filling

  1. Mix softened cream cheese, eggs, sugar and vanilla together on MEDIUM until mostly smooth - don’t over mix!

  2. Pour over the crust  

  3. Bake in 300° oven for 1 hour

  4. Remove from oven and cool for 10 minutes

Topping

  1. Mix topping ingredients together and pour over cake evenly

  2. Bake at 300° for 8 minutes

  3. Cool then refrigerate - cover with plastic wrap when cooled.


Tips

Don’t over-mix the filling or mix it at too high speed.  It makes the batter too airy and will make the cheesecake crack.

I know the filling is delicious - don’t eat too much of it - your cake will be lacking 😀
